Everyone enjoys a delicious sandwich now and then. I whip up a batch of onion jam to spread on my son’s new “favorite sandwich ever”-the Over-the-Top BLT. The jam’s addition really elevates the flavor of this humble American staple and makes it absolutely delicious. It’s fantastic in grilled cheese and a wonderful addition to a cheese tray. Trust me, people will love it!

Ingredients
- 1 large spanish onion or other sweet onion, peeled, cut in half and sliced into thin rings*
- 1 tablespoon salted butter
- ¼ cup dark brown sugar, packed
- ⅛ teaspoon coriander
- 1 pinch ground nutmeg
- 1 teaspoon grated ginger
- 1 lemon, grated zest and juice
- * Optionally, you can dice the onions
Instructions
- Saute onions in butter on low-medium heat until onions are translucent, about 10 minutes.
- Turn heat to low and add brown sugar, coriander, nutmeg, and ginger. Stir occasionally and add 1-2 tablespoons of water as needed to prevent sugars from burning.
- Reduce mixture until most of the liquid is evaporated leaving a thick jam-like consistency. This process takes about 45 minutes to develop. During the last five minutes, add lemon zest and lemon juice. Remove from heat and cool.
- Jam can be stored in the fridge for up to one week.
