Ingredients
- 1 package rice noodles
- 1 lb chicken, shrimp, or tofu
- 1 red bell pepper, sliced thin
- 2 carrots, sliced into matchsticks
- ½ cup edamame, optional
- 2 cloves garlic, grated
- 4 green onions whites and greens, sliced
- 2 cups bean sprouts
- ½ cup peanuts, coarsely chopped
- ¼ cup cilantro, chopped
- ¼ cup creamy peanut butter
- ¼ cup brown sugar
- ¼ cup low-sodium soy sauce
- 1 tablespoon lime juice
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon fish sauce
- 2 teaspoons ginger, grated
- 2 eggs
- sesame seeds for sprinkling, optional
- red pepper flakes to taste, optional
Instructions
- Prep the rice noodles: Place dry noodles into a deep mixing bowl. Completely cover noodles with very hot tap water and stir every 2 minutes or so to keep the noodles from sticking together. In approximately 10-12 minutes they should be a firm al dente. If you bite into a noodle it should still be chewy. Rinse with cool water and drain. Cooking the rest of the way occurs when incorporated into the wok.
- Prepare the sauce: in a small mixing bowl, place peanut butter, brown sugar, soy sauce, lime juice, rice vinegar, sesame oil, fish sauce, and ginger. Whisk together until ready to use.
- Heat oil in a wok and cook protein (chicken, shrimp, or tofu) until barely done. Remove from wok onto separate plate.
- Add more oil, 1 teaspoon, to wok and stir fry carrots, red pepper, bean sprouts, edamame, and stir for 2- 3 minutes.
- Using a spatula, push vegetables to the side and crack the eggs into the pan. Use spatula to scramble eggs and gently incorporate them back into the vegetables.
- Add in protein (chicken, shrimp or tofu) and sauce. Stir to combine. Pour in rice noodles. Stir until noodles are completely cooked. If needed, add chicken stock or water to complete the cooking process.
- Serve with sprinkling of green onions, red pepper flakes, chopped peanuts and sesame seeds. Enjoy!
