Have you ever had a bite of food, the first bite, and thought, “That is quite possibly the best thing I have ever eaten?” This recipe is it for me and most definitely for RJB (hubby). I will snap this entree together occasionally, mainly because it’s so easy. Truth be told, it’s super elegant, tasty and beautiful. But, it’s SO EASY! With the exception of ravioli (maybe not), you probably have the ingredients in the pantry, or fridge. So, you might ask, “Why don’t you make this all the time if it’s so great?” The answer lies in this picture …Enough of that, let’s make it! First, you’ll need to melt a half cup of salted butter over medium heat. Once that’s done, add the garlic, poppy seeds and pepper.It’s time to brown the butter. Turn the heat down and wait for the butter to turn brown and offer beautiful toasted bits to the bottom of the pan. By this time, your ravioli (seafood or lobster is wonderful in this recipe) should be boiling away in salted water. (Also, your kitchen is smelling absolutely amazing right about now).Now drain off the pasta and add it to a reduced brown butter sauce. Serve it up with a very generous amount of grated parmesan and a lovely sprinkle of freshly chopped parsley. Don’t forget to squeeze fresh lemon before serving!

Poppy Seed and Brown Butter Ravioli

Ingredients
- 13 ounce package of lobster ravioli (or favorite ravioli)
- 1 stick (½ cup salted butter)
- 2 teaspoons poppy seeds
- 1 clove garlic, finely minced
- Pepper to taste
- ¼ cup grated parmesan cheese (romano or asiago will also work)
- 1 tablespoon chopped parsley
- Lemon wedges for serving
Instructions
- Pepare pasta according to package directions and salt the water bath generously.
- In a shallow saute pan, add the stick of butter and melt over medium heat.
- When butter is melted, add poppy seeds, garlic, and pepper and continue cooking until the butter is brown with brown bits on the bottom. Refer to the picture above.
- Drain the cooked pasta after reserving about a half cup of pasta water. Add the pasta water to the brown butter sauce and begin to reduce.
- When brown butter sauce is noticeably reduced and thickened (about 2-3 minutes), add cooked ravioli.
- Serve in large pasta bowl or individual serving bowls and sprinkle with a generous amount of parmesan and chopped parsley. Finish with a squeeze of fresh lemon juice before serving. Enjoy!
